It’s asparagus season! Gobble it up cuz it has more protein than other veggies. And it has vitamin K, folic acid, Vitamin A, Vitamin C, B6, and fiber! Eat it with a healthy fat to help you absorb the fat-soluble nutrients.

Here’s an idea for a salad that doesn’t even require lettuce. Just crispy asparagus and another veggie or two! Or toss roasted asparagus onto your regular salad to kick it up a notch.

  1. Trim ends off of washed asparagus, then cut into pieces. Cook them in a pot of boiling salted water for 60 to 90 seconds. Drain and rinse with cold water.
  2. Toss in some other stuff. Almonds, carrots, red bell pepper, tomatoes, onion. Play around with it! See what you have in the fridge.
  3. Whisk together some olive oil, flavored vinegar, and sea salt. Or maybe you want to try a sweet dressing? Combine olive oil with honey and fresh squeezed orange. Dress your salad. Ta-da! Yum. You now have a delicious, crisp, nutrient-packed salad.
