It’s asparagus season! Gobble it up cuz it has more protein than other veggies. And it has vitamin K, folic acid, Vitamin A, Vitamin C, B6, and fiber! Eat it with a healthy fat to help you absorb the fat-soluble nutrients.
Here’s an idea for a salad that doesn’t even require lettuce. Just crispy asparagus and another veggie or two! Or toss roasted asparagus onto your regular salad to kick it up a notch.
- Trim ends off of washed asparagus, then cut into pieces. Cook them in a pot of boiling salted water for 60 to 90 seconds. Drain and rinse with cold water.
- Toss in some other stuff. Almonds, carrots, red bell pepper, tomatoes, onion. Play around with it! See what you have in the fridge.
- Whisk together some olive oil, flavored vinegar, and sea salt. Or maybe you want to try a sweet dressing? Combine olive oil with honey and fresh squeezed orange. Dress your salad. Ta-da! Yum. You now have a delicious, crisp, nutrient-packed salad.
