This recipe is so yummy. Enjoy it fresh and hot right out of the oven, but you can also snack on it cold all week long at work. Make a big ol batch! Cauliflower is great for you so snack away! It has Vitamins K and C and some B vitamins too. It has lots of potassium, fiber, and phosphorus. Cauliflower is a cruciferous vegetable, which means it may reduce risk of cancer!


  • 1 head cauliflower
  • good quality oil
  • sea salt and black pepper
  • curry powder
  • shredded unsweetened coconut


Grease a baking sheet or line it with parchment paper (I alllllways have parchment paper in the kitchen, plus an extra roll in case I run out.) Preheat oven to 400F. Wash the cauliflower and cut florets into same-sized pieces and place pieces in a big bowl. Toss with oil (either extra virgin olive, a coconut blend, or grapeseed) and salt/seasonings/coconut until the cauliflower is lightly coated. Spread out onto baking sheet and bake/roast for about 15 minutes. Yum! Amounts of seasoning will vary since amount of cauliflower in a head can greatly vary. Play around with it!
