This recipe is perfect for when you are craving that fresh-baked cookie. Or! This makes a yummy, healthy, and filling on-the-go snack. Great for breakfast! I love bringing these along when the band is on the road. Amounts of ingredients will vary due to the varying sizes of bananas. Note: I got this recipe idea here.
- Mash two ripe, peeled bananas. I use a potato masher.
- Add about 1 cup organic whole grain oats. Avoid instant or quick cook. Mix. Add more oats if you’d like. Use gluten free if you’d like!
- Now add other healthy stuff! Options: cinnamon, shredded unsweetened coconut, unsweetened raisins, dark chocolate chips (you only need a few per cookie), cacao nibs, chopped walnuts, slivered almonds, pumpkin seeds, goji berries, cacao powder. You just need a few of these things.
- Line a cookie sheet with parchment paper, or just grease a cookie sheet. Form flat cookie shapes. Bake at 350 until golden brown. Check after 12 minutes.
- Store in the fridge!
How can these cookies be healthy?
-Oats are a whole grain! And they have protein. They also contain iron, manganese, magnesium, and fiber.
-Bananas are a GREAT natural sweetener. And you’re only using about 2 bananas for 10 to 12 cookies. Bananas are high in potassium and vitamin B6. They also have vitamin C and fiber.
-Walnuts are a great source of healthy fat, protein, and antioxidants. They are good for your brain and have been known to lower cholesterol.
-These cookies have no added sugar or refined grains! Compare one of these bad boys to a packaged cookie filled with preservatives and sugar. There’s just no comparison!
